Pappy's

While we were in St. Louis for Annie's cousins wedding, we got to taste some hometown BBQ.  I had  been told of the legendary BBQ served in St. Louis, so I did some investigating before our trip.  One of my patients spoke highly of Pappy's.  Since the wedding was on Friday, we grabbed some Birds (electric scooters) the morning after, and made the trip from our hotel.

Being naive of it's fame, we got there 1hr after the restaurant opened; finding ourselves in 1.5hr wait. The line was a bit confusing to navigate, but apparently they have the system figured out.  Once we ordered our food it came out in 5min.  Needless to say the food was worth the wait.  The ribs had an amazing combination of smokey and sweet, and were perfect "fall off the bone" texture.  Sauce was on the table, to provide choices of how to flavor, and I wasn't a huge fan of either selection.  We also got potato salad, which reminded me of my mom's (lots of mayo!); as well as street corn which was soft more than it was crisp.

Overall the ribs were very good, and I would describe them as some of the best BBQ I've ever had.  As someone who has recently dabbled in cooking ribs, I can confidently say the perfection they have accomplished is impressive.  f you like BBQ and you're in St. Louis, it is a must.  Otherwise, don't bother: the interior is nothing special, the wait is a turn off, and it's kind of located in the middle of nowhere.
